A Taste of Provence: How to Make a Lavender Iced Latte
Ahh if only we were sitting in Provence and sipping a smooth coffee as the sun peaks over the purple lavender fields. We can only dream! If you are needing some caffeine as a pick me up after daydreaming, try out this amazing lavender coffee. We love this recipe because the lavender is not overpowering, but will simply elevate your afternoon latte break. This recipe will make a LOT of the lavender syrup, so save it for the future! You can use it for future lattes (hot or cold), mix it into cocktails, drizzle it over muffins as a glaze, or brush it on cake layers before frosting them.

Ingredients
For the lavender syrup:
- 1 cup water
- 1 cup white sugar
- 1 tablespoon culinary dried lavender (find at your local whole foods or on amazon!)
For the lattes:
- 1 cup cold brew coffee
- 2 cups ice, plus more for shaking
- 1 cup skim milk (or alternative milk)
- 1/2 teaspoon instant espresso powder
- Lavender syrup, to taste

Directions
For the lavender syrup:
- Make the lavender simple syrup: Combine the water, sugar, and dried lavender in a small saucepan. Bring to simmer over medium heat, stirring constantly to dissolve the sugar. Once all of the sugar is dissolved, turn off the heat. Let the mixture cool to room temperature.
- Place ice and the syrup in a cocktail shaker and shake for several minutes.
- Strain the syrup through a fine-mesh sieve and discard the lavender. Let cool completely. You can store this in the refrigerator for up to 2 weeks!
For the lattes:
- Divide the 1 cup of cold brew and the 2 cups of ice among two glasses. Then, fill your cocktail shaker with additional ice. Add the milk and the espresso powder and shake vigorously for at least 30 seconds. Strain into the two glasses, then sweeten each with the lavender syrup to taste.
- Close your eyes as you sip and pretend you are in Provence!
