The Classic French Cookie
Ready for tea time? This week we’re here with a buttery, flaky, and elegant dessert recipe: French palmiers. Although their complex structure makes it seem like these are impossible to make, they’re actually quite easy to bake. What it really comes down to is sugar and a sheet of puff pastry. If you want to challenge your baking skills, you can make the pastry yourself … but store-bought works too. The best thing about baking palmiers is that you can add your own twist to the filling. Our favorite is a classic sugar, but you can switch it up with a cinnamon or citrus flavor.
Ingredients
- 1 sheet frozen puff pastry
- 1/4 cup demerara sugar, brown sugar, or granulated sugar (more if needed)
Equipment
- Rolling pin
- Measuring cups
- Sharp knife
- Baking sheet
- Parchment or baking mat
Instructions
- Thaw the puff pastry until it’s pliable
- If frozen, place your puff pastry in the fridge to thaw overnight
- Another option is placing it on the counter
- Lightly roll out the pastry
- Sprinkle with sugar
- Sugar should be dispersed evenly on the surface.
- Roll over it lightly to press the sugar in
- Fold the left and right sides inward until they meet in the middle
- Sprinkle more sugar and lightly roll over the dough tro press in the sugar
- Fold the left side over the right side (like a book)
- Cover with plastic wrap and frigerate the dough for 30 minutes
- Heat the oven to 425°F
- Cut the log
- Slice the log into cookies (1in. wide)
- Transfer to a baking sheet
- Line a baking sheet with parchment paper
- Lay the cookie cut-side up spacing them a few inches apart
- Add more sugar if you like it sweet
- On the middle rack, bake the cookies until golden brown
- This should take about 18-20 minutes
- Cool and eat
